When I was first diagnosed with food allergies, I was told that I was allergic to wheat among many other foods. For four years I have not eaten even a morsel of bread!! Being allergic to yeast as well kept me from pursuing other types of flour alternatives for bread. I learned to adjust to a bread-free life. After all, those of us with food allergies know that choosing not to eat something isn't just a preference...it's a matter of life and death.
I'm from Oklahoma and to someone in the Heartland of America, a meal like Beans-n-Cornbread is just a staple of life. Can you imagine having that perfect pot of beans simmering on the stove top and realizing that you can't have cornbread to go with it? And then...can you imagine the excitement when you find a cornbread recipe that is flour free?!?!
On Thanksgiving Day, I ate cornbread for the first time in four years!! It was SO good!! In case you are wondering...no, I didn't eat Beans-n-Cornbread for my Thanksgiving meal. But I can tell you that the cornbread truly made my meal. This recipe is a keeper and it's AllergyFree4Me!!
